Cool Celery Pockets Serves 1 |

Ingredients
1 Pita pocket bread
1/2 Cup Texas lettuce or sprouts
2 Tablespoons of Texas celery, chopped
2 Tablespoons of the following: chopped Texas tomatoes, cucumbers, mushrooms or apples
2 Tablespoons low fat cheese, shredded
2 Tablespoons lean chicken/turkey chunks or water-packed tuna
2 Tablespoons salsa
Low fat mayonnaise (optional) |

Directions
Wash vegetables and fruit well.
Cut the pita bread in half and open the pocket.
Stuff with suggested fillings.
