Easy Pasta Primavera |
Serves 4
Ingredients
1 12-ounce package of dried pasta - choose your favorite shape!
1 Table olive oil
3 Cups of your favorite veggies cut into bite-sized pieces. Try these: Texas zucchini, broccoli, green beans, peas, carrots, cherry tomatoes and red or green bell peppers
1/2 Cup pesto - you can purchase this in the refrigerated section of the grocery store
1/2 Cup plus 2 Table of fresh Parmesan cheese, grated |

Directions
Wash vegetables well.
Prepare the pasta according to the directions on the package. Drain and return to the pot you boiled it in.
Heat olive oil in a large saucepan set over medium heat. Add the vegetables and sauté for 5 minutes. The vegetables should remain crisp and not limp or squishy.
Add the pesto, vegetables and 1/2 cup of Parmesan cheese to the pasta and toss gently. Reheat slightly if the pasta has become too cold.
Sprinkle the remaining cheese on each plate and serve.
