"I am a West Texas cowboy and I love to tell stories. Did you know that potatoes were the first vegetable to be grown in space? NASA helped develop the technology with the goal of providing food for astronauts on long journeys and for future space colonies.

I have over 5,000 potato cousins and each is high in vitamin C and potassium. Potassium helps your bones hold onto calcium so they stay strong. It also helps your blood pressure stay in a healthy range. Most of the nutrients in potatoes are close to the surface, so prepare and eat them with skins on. Just remember to give them a good scrubbing first. Potato skins are very high in fiber and they help with digestion."

  • Potatoes are grown in all of the state's major growing regions. Some of the top production areas include the High Plains, the Winter Garden area and the Rio Grande Valley.

  • Texas grows many different varieties of potatoes. Red La Soda and Viking are the main red skin varieties. White skin potato varieties include Atlantic, Snowden, Gemchip and Norchip. Norgold M, Russet Norkotah and Century Russet are the most popular russet skin varieties.
