"I love to dance ballet. It's especially fun to watch my frilly green top twirl when I whirl. And, I have no worries about seeing double when my turning ends because I am full of vitamin A, which promotes healthy eyes. Have you ever seen a rabbit wear glasses? I always say, "Eat a carrot a day and keep the eye doctor away!"

Carrots' sweet, crunchy goodness has been loved for many years, making carrots an important part of the diet for centuries. The ancient Greeks used carrots to cure tummy aches. When carrots were first grown in Central Asia, the most common varieties were green and purple. Today, you can find maroon carrots in Texas. In any color, carrots are always great as a snack or cooked with other veggies."

  • Carrots are a popular Texas crop, harvested from about 4,000 acres in the Lone Star State.

  • Nationwide, Texas ranks 5th for U.S. carrot production. Carrots are typically planted from August through November for harvest in the winter and spring. They are primarily grown in the Lower Rio Grande Valley in South Texas. Other growing areas include the Winter Garden area and the High Plains.
